1 liter full-fat milk

100 g granulated sugar

180 g thinly grounded yellow corn flour

50 g plain white flour

2 eggs

30 g raisins, soaked in Marsala wine or Grand Marnier

15 g toasted pine nuts

lemon zest

30 g butter

1 teaspoon baking powder

icing sugar

5 g coarse salt


How to Prepare

Put the milk, butter, salt, granulated sugar In a saucepan and bring to the boil.

Add both the sifted flours and cook for 15 -20 minutes. Remove from the heat and let it cool; add the dried fruit, the eggs (one at a time), lemon zest and finally the baking powder.

Form small balls with a spoon, placing them on a baking sheet greased or lined with parchment paper.

Bake in the oven at 200°C for 20 minutes.

Dust with icing sugar.
