Ingredients
3 medium onions, 6 eggs, cup whole milk, 2 tablespoons grated Parmigiano cheese, 2 tablespoons breadcrumbs, 6-7 St Peter’s grass leaves or 1 tablespoon fresh mixed herbs, chopped, extra virgin olive oil, salt and pepper
How to Prepare
Clean, wash, chop the onions and brown them in a pan with 2 tablespoons of olive oil and 3-4 tablespoons of water.
In a bowl beat the eggs with the milk, salt, pepper, Parmigiano cheese and breadcrumbs. Combine this mixture with the leaves of St. Peter’s grass or fresh aromatic herbs.
Pour the batter into the pan containing the browned onions and cook for 3-4 minutes on one side, then turn and cook the other side for the same time.
Serve the frittata after decorating with whole leaves of the grass.
Advice
The aromatic herbs that can be used as an alternative to St Peter’s grass are: basil, thyme, sage, oregano and others.
