Asparagus is . synonymous with spring because it sprouts between March and May – a delicate and refined vegetable, that originated in Mesopotamia. The Veneto region started growing it in the 1500s and Bassano produced the extraordinary white asparagus, which grows underground away from sunlight, untili it becomes 18/20 cm long with a diameter of at least 1,5 cm.It is quite rare and best eaten within a few days from harvesting to fully appreciate its characteristic bitter-sweet taste.

The “cracks” are not a defect but actually a plus and are caused by its low fibre content.
